Baking mix


A baking mix is a pre-mixed formulation of ingredients used for the cooking of baked goods. Baking mixes may be commercially manufactured or homemade. Gluten-free baking mixes exist, which may be prepared using rice flour in place of wheat flour. Baking mixes are produced for the preparation of specific foods such as breads, quick breads, pancakes, waffles, cakes, muffins, cookies, brownies pizza dough, biscuits and various desserts, among other foods. Some all-purpose baking mixes, including commercial and homemade varieties, can be used to prepare several types of baked goods, such as biscuits, pizza dough, muffins, cookies and pancakes, among others. Some bread baking mixes are formulated for use in a bread machine. Ingredients in baking mixes may include flour, bread flour, baking powder, baking soda, yeast, sugar and salt, as well as others depending upon the food type. Dry baking mixes typically require the addition of water or milk, and may also require additional ingredients such as eggs and cooking oil.

Atkins used information from the study to resolve his own overweight condition.

Arrowhead Mills is a brand of organic baking mixes, grains, cereals, and nut butters.

The brand has been owned by Hain Celestial Group since 1999. Its consumer affairs department is located in Boulder, Colorado.

Arrowhead Mills was founded in 1960 by nutritionist Frank Ford in Hereford, the seat of Deaf Smith County in the southern Texas Panhandle west of Amarillo, Texas. Ford sought to sell corn and wheat free of pesticides. The grains were initially stone-ground and sold to local markets. Later, Ford built its current facility in Hereford and added other products such as beans, seeds, cereals, and baking mixes.

Many Arrowhead Mills products are certified at least 70% organic by the Texas Department of Agriculture (TDA) or Pro-Cert Organic Systems. Among the non-organic products are some hot and cold cereals, most nut butters, and some baking mixes.

Atkins Nutritionals, Inc. was founded by Robert Atkins in order to promote the low-carbohydrate packaged foods of the Atkins diet. Currently it is owned by Roark Capital Group.

Atkins founded Atkins Nutritionals, Inc. in 1989 to promote the low-carbohydrate products of his increasingly popular Atkins diet. This diet was developed after Atkins read a research paper in the Journal of the American Medical Association published by Gordon Azar and Walter Lyons Bloom. Atkins used information from the study to resolve his own overweight condition.

In October 2003 Parthenon Capital LLC and Goldman Sachs both acquired stakes in the company. Following the death of its founder in 2003, the popularity of the diet and demand for Atkins products waned, causing Atkins Nutritionals Inc. to file for bankruptcy in July 2005, citing losses of $340 million.

The company emerged from bankruptcy in 2007 owned by North Castle Partners, with a softened marketing emphasis on the low-carbohydrate aspect of its products and an attempt to emphasize the overall nutritional value of its line of foods. It now has in place a business strategy concentrating on sales of nutrition bars and shakes.

Roark Capital Group bought the company in 2010. Under Roark it has stabilized but it is rumored to be a disappointment;n its 6 year hold period is longer than typical for private equity firms. In February 2015 it was reported that Roark was seeking to sell the company but no buyer ever materialized.

The Atkins Nutritionals' products are low-carbohydrate. Although the marketing focus of the company has changed after their emergence from bankruptcy, the products remain low-carbohydrate to stay faithful to the philosophy of the diet. It is also stated on the packages the stage of the Atkins Nutritional Approach where they may be used. There are four lines of Atkins products, Advantage, Day Break, Endulge and Cuisine.

In the Advantage line, the main products are meal bars, snacks and shakes. The Advantage bars claim to be "a satisfying meal replacements or filling snacks". The Advantage Snack/Light Meal Bars claim to "help fight hunger in-between meals". The Advantage Shakes claim to have "protein, fiber, vitamins, and minerals with almost no sugar".

Aunt Jemima

Aunt Jemima is a brand of pancake mix, syrup, and other breakfast foods owned by the Quaker Oats Company of Chicago. The trademark dates to 1893, although Aunt Jemima pancake mix debuted in 1889. The Quaker Oats Company first registered the Aunt Jemima trademark in April 1937. Aunt Jemima originally came from a minstrel show as one of their pantheon of stereotypical black characters. The character appears to have been a Reconstruction era addition to that cast.

The inspiration for Aunt Jemima was Billy Kersands' American-style minstrelsy/vaudeville song "Old Aunt Jemima", written in 1875. The Aunt Jemima character was prominent in minstrel shows in the late 19th century and was later adopted by commercial interests to represent the Aunt Jemima brand.

St. Joseph Gazette editor Chris L. Rutt, of St. Joseph, Missouri, and his friend Charles G. Underwood bought a flour mill in 1888. Rutt and Underwood's Pearl Milling Company faced a glutted flour market, so they sold their excess flour as a ready-made pancake mix in white paper sacks with a trade name (which Arthur F. Marquette dubbed the "last ready-mix").

1889 Formula for Aunt Jemima mix:

Rutt reportedly saw a minstrel show featuring the "Old Aunt Jemima" song in the fall of 1889, presented by blackface performers identified by Marquette as "Baker & Farrell". However, Doris Witt was unable to confirm Marquette's account. Witt suggests that Rutt might have witnessed a performance by the vaudeville performer Pete F. Baker, who played a character described in newspapers of that era as "Aunt Jemima". If this is correct, the original inspiration for the Aunt Jemima character was a white male in blackface, whom some have described as a German immigrant. A character named "Aunt Jemima" appeared on the stage in Washington, D.C., as early as 1864.

Marquette recounts that the actor playing Aunt Jemima wore an apron and kerchief, and Rutt appropriated this Aunt Jemima character to market the Pearl Milling Company pancake mix in late 1889 after viewing a minstrel show. However, Rutt and Underwood were unable to make the project work, so they sold their company to the Randolph Truett Davis Milling Company in St. Joseph, Missouri, in 1890.

Betty Crocker


Betty Crocker is a fictional character used in advertising campaigns for food and recipes, originally by the Washburn-Crosby Company, today General Mills, an American Fortune 500 corporation which owns the brand name and trademark. Betty epitomizes a motherly, caring and knowledgeable homemaker offering cooking and housekeeping advice. A portrait of Betty Crocker first commissioned in 1936 and revised several times since appears on printed advertisements and product packaging. On television and radio broadcasts, Betty Crocker was acted by several actresses, most notably by Adelaide Hawley Cumming between 1949 and 1964.

The character was first developed by Marjorie Husted in 1921 as a way to give a personalized response to consumer product questions. The name Betty was selected because it was viewed as a cheery, all-American name. It was paired with the last name Crocker, in honor of William Crocker, a Washburn Crosby Company director.

Described as an American cultural icon, image of Betty Crocker has endured several generations, adapting to changing social, political and economic currents. Apart from advertising campaigns in printed, broadcast and digital media, she received a number of cultural references in film, literature, music and comics.

Betty Crocker was created in 1921 by Marjorie Husted, a home economist and businesswoman, and advertiser Bruce Barton. Under Husted's supervision the image of Betty Crocker became an icon for General Mills. In 1928, Washburn Crosby merged with five or more other milling companies to form General Mills.

In 1924, Betty acquired a voice with the debut of "The Betty Crocker Cooking School of the Air" on one station in Minneapolis. It was the country's first radio cooking show, and Agnes White was selected to portray Betty Crocker. The show proved popular, and eventually was carried nationally on NBC Radio, with Agnes as Betty. Over the next two decades, Agnes would anonymously portray Betty Crocker on the air and at cooking schools.

In 1929, Betty Crocker coupons were introduced. Inserted in bags of flour, they could be used to reduce the cost of Oneida Limited flatware. By 1932, this scheme had become so popular that General Mills began to offer an entire set of flatware; the pattern was called "Friendship" (later renamed "Medality"). In 1937, the coupons were printed on the outside of packages, copy on which told purchasers to "save and redeem for big savings on fine kitchen and home accessories in our catalog".

Bisquick


Bisquick is a pre-mixed baking mix sold by General Mills under its Betty Crocker brand, consisting of flour, shortening, salt, and baking powder (a leavening agent).

According to General Mills, Bisquick was invented in 1930 after one of their top sales executives met an innovative train dining car chef on a business trip. After the sales executive complimented the chef on his deliciously fresh biscuits, the dining car chef shared that he used a pre-mixed biscuit batter he created consisting of lard, flour, baking powder and salt. The chef then stored his pre-mixed biscuit batter on ice in his kitchen ahead of time, enabling him to bake fresh biscuits quickly on the train every day. As soon as the sales executive returned from that business trip, he created Bisquick.

The recipe was adapted, using hydrogenated oil, thus eliminating the need for refrigeration. Bisquick was officially introduced on grocers' shelves in 1931.

Though first promoted for only baking biscuits ("90 seconds from package to oven", the slogan read), Bisquick was soon used to prepare a wide variety of baked goods from pizza dough to pancakes to dumplings to snickerdoodle cookies.

One cup of Bisquick can be substituted by a mixture of one cup of flour,  1 1⁄2 teaspoons of baking powder,  1⁄2 teaspoon of salt, and  2 1⁄2 tablespoons of oil or melted butter (or by cutting in  2 1⁄2 tbsp Crisco or lard).

Bruce Foods Corporation, was founded in New Iberia, Louisiana, in 1928, is one of "America's largest privately owned food manufacturers," manufacturing many food products under five major labels, and is credited with "pioneering the canning of Mexican food." With four stateside manufacturing plants, the company has more than 1,200 employees.

Among its brands are Bruce Foods manufactures Cajun Injector marinades, Casa Fiesta Mexican Foods, Mexene Chili Products, Cajun King, and Bruce's Sweet Potato Pancake, Muffin & Biscuit Mixes.

As part of its "Green Initiative", the company recently updated an 11,000 square feet (1,000 m2) building in Wilson, North Carolina, with a renewable energy system designed to recover methane gas, a normal waste by-product that had, until now, been released into the atmosphere. The recovered gas assists with the plant's energy needs; additionally, the plant's water treatment system has accrued a 6-million-US-gallon (23,000 m3) gas digester which is meant to ensure a more efficient water treatment process.

In 2009, Bruce Foods contested the decision by the Louisiana state budget panel to award ConAgra Foods, Inc., with a multi-million dollar contract to construct a sweet potato facility. On the Moon Griffon radio show, Bruce Foods President Si Brown charged that the state's economic development office, headed by Stephen Moret, had unnecessarily underwritten the out-of-state competitor with tax dollars. Brown asserted that his company could have built the plant in question for $1 million, whereas ConAgra was granted a $37 million contract. According to Moret, since Bruce Foods has been unwilling to open up their ledgers, they were automatically disqualified from receiving state economic loans. Brown countered that since Bruce Foods is a privately held company, they are not required to file financial disclosures.

Cajun Injector founder Chef Maurice “Reece’’ Williams sued Bruce Foods to the tune of $24 million in 2005, claiming that the company had not done due diligence promoting the product, as agreed upon when Williams sold his line of injectable marinades to Bruce Foods. According to a jury, Williams was unable to prove that he had been "fraudulently induced to sell the line of marinades", and instead ruled that Cajun Injector had breached the purchase agreement by not providing Bruce Foods with the marinade recipes. The jury also awarded Bruce Foods $224,000 in damages for debts incurred by Cajun Injector before the sale of purchase. Williams, however, was not held personally liable for any of the damages, which totaled $1.1 million.
