CraftWorks Restaurants & Breweries, Inc. is a multi-brand restaurant operator headquartered in dual offices in Chattanooga, Tennessee and Broomfield, Colorado USA. The company owns several casual dining restaurant chains, most notably Old Chicago, Gordon Biersch Brewery Restaurants, and Rock Bottom Restaurants Breweries. CraftWorks owns and operates nearly 200 restaurant locations throughout North America, has more than 12,000 employees, and over 70 locations serving beer brewed on-site, making it the largest operator of brewery restaurants.

In 1976 the first Old Chicago taphouse opened in Boulder, Colorado. The first Gordon Biersch Brewery Restaurant was opened in Palo Alto, California] on July 6, 1988. The first Rock Bottom restaurant opened in Denver, Colorado in 1991. In 1993 Big River Breweries opened its first location in Chattanooga, Tennessee.
Rock Bottom Restaurants, Inc., made an initial public offering in 1994. In 1995 the first ChopHouse opened in Denver, Colorado. Big River Breweries opened the only brewpub at Walt Disney World in 1996. A private management buyout took Rock Bottom Restaurants, Inc. private in 1999. In the same year, Gordon Biersch acquired by Big River Breweries. In 2000, Rock Bottom Restaurants formed the Rock Bottom Foundation, a 501(c)(3) non-profit entity. Rock Bottom Restaurants laid off about 20% of its corporate staff in 2007 and slowed its growth plans along with ceasing its search for an equity partner. In 2010 a merger was announced to form CraftWorks Restaurants and Breweries, Inc. In 2010, Rock Bottom Restaurants and Gordon Biersch Brewery Restaurant Group were acquired by Centerbridge Capital Partners and merged to form CraftWorks Restaurants and Breweries, Inc.

CraftWorks Restaurants & Breweries operates 60 restaurants under the name Old Chicago. Franchise partnerships under its Old Chicago brand account for 36 additional locations not owned or operated by CraftWorks. Old Chicago restaurants can be found in 22 states. Old Chicago features a menu centered around its pizza, while also featuring more traditional fare, such as pastas, paninis, salads, burgers, and calzones and sharable appetizers. Each restaurant also carries a wide variety of beer, with around 30 on tap and additional selections in bottles or cans, challenging its patrons to complete its famed World Beer Tour. Beer varieties range from well-recognized national brands, regional and local craft beer and seasonal selection. Patrons can sign up for the World Beer Tour (WBT) at no cost, at which point they receive a card that tracks all of their beers consumed. Upon reaching 110 different beers, the patron gets a plaque with their name, and at most stores a personal quote, hung in their designated "home" Old Chicago location. As an added bonus, WBT members also earn points based on previous purchases that can be traded in for various things such as credit towards a bill on future visits, merchandise, or exclusive parties at Old Chicago locations. Old Chicago also offers seasonal “Mini-Tours”, that feature between eight and 12 seasonal beers. Some examples are the Oktoberfest, St. Patrick’s Day, Cinco de Mayo, Summer, and Winter Mini-Tours. As a reward for completion, patrons typically receive a themed Mini-Tour T-shirt.

Pagliacci Pizza


Pagliacci Pizza is a Seattle-based restaurant chain. The first Pagliacci Pizza location opened on February 19, 1979, at 4529 University Ave NE in Seattle's University District. Over the years, this location has undergone many face-lifts and major remodeling changes.

Since the original pizzeria opened, Pagliacci Pizza has grown to 24 locations across the greater Seattle and Bellevue area, most of which offer delivery, sit-down dining and pizza-by-the-slice bars. An interior decor staple for the local chain is Italian-language movie posters. On November 1, 2012, Pagliacci Pizza opened Seattle's first stand-alone LEED-certified pizzeria in the Madison Park neighborhood.

In recent years, Pagliacci Pizza has made an effort to be more eco-friendly, using compostable boxes and packaging, and purchasing green-power offsets from Seattle City Light and Puget Sound Energy. Since 2011, Pagliacci Pizza's boxes have been made using materials from Forest Stewardship Council-certified local forests and post-consumer recycled fiber. The chain's Wallingford, Madison Park and Old Bellevue locations were built using sustainably-sourced materials.

Peter Piper Pizza is an Arizona-based pizza chain with locations in Arizona, California, New Mexico, Texas, Oklahoma, Nevada, and Mexico, and formerly in Colorado, Utah, and Michigan. Restaurants usually have a large dining area that adjoins a game room with playground equipment and classic arcade games.

Anthony M. "Tony" Cavolo, founded Peter Piper Pizza in Phoenix, Arizona in 1973. The first Peter Piper opened in Glendale, Arizona. There are 139 corporate and company-owned restaurants in the United States and Mexico. In 1995, Peter Piper acquired its hometown competitor Pistol Pete's Pizza. In 1992, Peter Piper Inc. was acquired by The Venture West Group. The company was sold again to ACON Investments in 2007. CEC Entertainment, Inc. acquired the company in October 2014. CEC Entertainment, Inc. is a wholly owned subsidiary of Apollo Global Management L.P.

The restaurant offers pizza in a variety of sizes and crust types. Each restaurant makes its dough from scratch each day. Other foods offered include: chicken wings, salads, bread sticks, a cinnamon crunch dessert, and beer and wine at some locations. A lunch buffet is offered as well during weekday lunch hours at a low cost.

Peter Piper Pizza has various seating options to fit most occasions, including outdoor patios and private event rooms at select restaurants.

Most locations feature a large game room filled with video games, classic games (e.g., skee-ball), slides, tunnels, and toddler areas suitable for small children. Tokens must be purchased to play the games. Many of the games produce tickets that can be redeemed for prizes at the prize redemption counter.

In March 2014, Peter Piper Pizza redesigned its logo utilizing a serif font face following an abstract design. The new logo was created by WD Partners as part of an effort to connect "with Gen X and Millennial parents." The updated design was widely panned.

As of December 2016, Pie Five has 98 restaurants in the following locations: Alabama, Arkansas, Florida, Georgia, Illinois, Indiana, Kansas, Maryland, Minnesota, Missouri, Nebraska, North Carolina, Oklahoma, Tennessee, Texas, Utah, Kentucky, Virginia and Washington, D.C. with more than 400 additional company-owned and franchise units anticipated.

Pie Five was named for the concept of being able to offer a pie in five minutes. The menu offers a selection of signature and build-your-own personal pizzas with unlimited toppings for one price. They offer four different crusts, including gluten-free, classic pan, crispy thin and traditional Italian, as well as hand-made salads and desserts. Many locations serve beer.

The first Pie Five location opened on June 3, 2011 in Fort Worth, Texas. They continued their growth in the Dallas - Fort Worth market in 2012 and then in 2013, they opened their first franchise location out of state in Matthews, North Carolina as well as two additional franchise locations in Kansas. In 2014, they experienced rapid growth in Florida, Virginia, Tennessee, Missouri, and Maryland. In 2015, they opened 50 additional locations spreading across the Midwest, South and East Coast. This was also the year they opened their first non-traditional location in DC in the L'Enfant train station, as well as their first casino at the Hard Rock Casino in Biloxi, MS. In 2016, Pie Five celebrated multiple milestones including their first mall location and 5 year anniversary. In March 2017, they announced that 8 out of 9 Chicago locations are closing down and with only 1 more opening in March. Pie Five closed several Midwestern stores on Mar 21, 2017, including two locations in the Twin Cities metro in Eden Prairie and Woodbury, which had been open for more than a year and several Chicago area locations -- to focus on its other markets. Only 2 locations will remain in Illinois.
