Blaze Pizza LLC is a Pasadena, California-based chain within the fast-casual dining restaurants category. Founded in 2011 by Elise and Rick Wetzel of Wetzel’s Pretzels, Blaze Pizza was modeled after the Chipotle concept as a made-to-order approach to serving customers.National Basketball Association (NBA) champion LeBron James is one of the original investors in the chain, which is touted by Bloomberg “as the next Chipotle”.

Blaze Pizza was ranked as the #2 brand in the 2015 Fast Casual Top 100.

Blaze Pizza’s name was derived from how quickly a create-your-own pizza can be “Fast Fire’d” in a high-temperature open-flame oven – an average cook time is 3 minutes. Customers begin by choosing which of the ingredients they’d like on their pizza pie. As they work their way down the assembly line, staff assist the customer at each step resulting in a unique custom pizza each time. When they arrive at the end of the line, their custom-built pizza is ready to be cooked.

In an interview with a restaurant industry trade magazine, executive chef Brad Kent describes the oven as a "7 foot (2.1 m)-wide gas-fired (60,000 BTU (63,000 kJ)) unit operated at average temperatures of 700 °F (371 °C) to 800 °F (427 °C)" According to Kent, unit managers are responsible for checking the correct temperature balance on a daily basis since there are three different temperature zones within the oven that requires monitoring. Since the high-temperature gas-fired pizza oven is the only piece of cooking equipment inside each of the restaurants, the same oven is also use to roast the chicken, cook the Italian sausage and meatballs, and bake some of the deserts.

Blaze Pizza was founded in Pasadena, California by Rick and Elise Wetzel in 2011. The fast-fired, customizable pizza concept debuted with their first location in Irvine, California on August 2012 which was quickly followed two months later by the opening of their second, and flagship, location in October 2012 in Pasadena, California. In 2014, Zagat noted Blaze Pizza as “One of 10 innovative restaurants around Los Angeles.” The concept’s popularity has been fueled by its obsessive attention to food, design and its unique service culture.

Boston Pizza (also known as BP and, in the United States and Mexico, as Boston's) is a Canadian-based restaurant chain that owns and franchises locations in Canada, the United States and Mexico.

Boston Pizza began in Edmonton, Alberta, on August 12, 1964, when a Greek immigrant, Gus Agioritis, opened Boston Pizza and Spaghetti House. By 1970, Boston Pizza had 17 locations in Western Canada, 15 of which were franchised.

One of the first franchisees was Jim Treliving, a Royal Canadian Mounted Police officer. In 1968, he noticed the growing popularity of Boston Pizza and purchased the rights to open a restaurant in Penticton, British Columbia. While in Penticton, he met George Melville, a chartered accountant. He acted as Treliving's business consultant for four years, and, in 1973, became Treliving's business partner. Over 10 years, they opened 16 restaurants in British Columbia.

In 1983, Treliving and Melville acquired the Boston Pizza chain from Ron Coyle, who had acquired the company from Agioritis in 1978. The two divested 15 of their restaurants to other franchisees, converted one restaurant to a corporate training restaurant and set about establishing systems and operating standards to standardize company operations. In the early 1980s, Boston Pizza expanded into Eastern Canada but by late 1985 most, if not all restaurants in Ontario were closed. In 1986, Boston Pizza became the official pizza supplier for Expo 86 in Vancouver. This major success for the company led to expansion in Eastern Canada. In the next two years, it led to another 17 franchises.

By 1995, the chain had grown to 95 restaurants in Western Canada with sales in excess of $110 million (CAD). Over the many years the restaurants had become a success, more sports bars had been established as an integral part of the business.

In 1997, Mark Pacinda was hired to bring the chain to more eastern areas of Canada. Once an Eastern Office was opened in Mississauga, another restaurant was opened in Ottawa in September 1998. The company later opened a regional office in Laval, Quebec, in April 2004. As of December 2012, there are 348 Boston Pizza restaurants in Canada, and over 40 in the U.S. and Mexico.

California Pizza Kitchen, known within the food industry as CPK, is a polished casual dining restaurant chain that specializes in California-style pizza. The restaurant was started in 1985 by attorneys Rick Rosenfield and Larry Flax in Beverly Hills, California, United States.

The California Pizza Kitchen chain is widely known for its innovative and nontraditional pizzas, such as the "Original BBQ Chicken Pizza", BLT, Thai Chicken, and Jamaican Jerk Chicken pizzas. They also serve various kinds of pasta, salads, soups, sandwiches and desserts. They have an extensive children's menu for children ages 10 and under which includes a variety of different pizzas, pastas, salad and chicken.

The chain has over 200 locations in 32 US states and 13 other countries, including 17 California Pizza Kitchen nontraditional, franchise concepts designed for airports, universities and stadiums.

CPK's brand is licensed to a line of hand-tossed style, crispy thin crust, gluten-free crust and small frozen pizzas for sale in supermarkets. The brand was originally licensed to Kraft in 1999. The license was assigned to Nestlé after it purchased Kraft's pizza lines in 2010.

In 1985, Flax and Rosenfield pooled $200,000 in bank loans and savings along with $350,000 invested from friends to lease space on Beverly Drive in Beverly Hills, California. The first menu, including the famous BBQ Chicken Pizza, was developed by Ed LaDou, then the pizza chef at Wolfgang Puck's Spago restaurant. CPK became an immediate success, and the company expanded throughout Southern California. By 1992, there were 26 CPKs.

Chicago Franchise Systems, Inc. franchises operates Italian-based Chicago-style restaurants in Illinois, Georgia, California and Missouri which specialize in Chicago-style cuisine They have operated since 1990, when they took over the popular Nancy's Pizza chain of pizzerias. Nancy's itself was started in 1971 by Nancy and Rocco Palese, a couple who claims to have invented the concept of stuffed pizza. Today, there are 36 Nancy's locations in Chicago metropolitan area, as well as two location in the Atlanta, Georgia area, and one in the Los Angeles, CA area. CFS, Inc. operates Al's Beef, a popular Italian beef restaurant that is extremely well known in downtown Chicago and is regarded as one of the best beef sandwiches in the country. CFS, Inc. just launched Doughocracy Pizza + Brews, a fast casual pizza place that gives customers the "Freedom to Choose" their own toppings on a hand stretched pizza crust that can be paired with local craft beers. There are two Doughocracy restaurants, one in Geneva, Illinois and one in University City, Missouri, a suburb of St. Louis.

Nancy and Rocco Palese had lived most of their adult lives in Turin, Italy before immigrating with their three children to the United States in 1969. After 18 months in Chicago, Nancy and Rocco opened their first pizza parlor, Guy's Pizza, featuring a popular thin crust pizza. In 1971 friends tried to get the Paleses to experiment with pan pizza. Rather than imitate others, Rocco decided to invent his own pizza, modeled after his family’s recipe for "scarciedda," an Easter specialty cake and called his new invention Stuffed Pizza.

In 1974, Rocco and Nancy opened the first Nancy's location in Harwood Heights, Illinois, which could seat only 35 people. Three years later, they opened the first location in Chicago. In 1990, the Palese family sold the name Nancy’s Pizza and all development rights to Dave Howey, the president of Chicago Franchise Systems, Inc., who had been a licensee of the Paleses since 1977.
