Udders (ice cream)


Udders is a Singapore-based ice cream parlour franchise with six shops to its name. Owned by David Yim, it was established in 2007.The company’s selling point is its local and liqueur ice-cream flavours. There are now five outlets with one outlet specialising in pancakes.

A former educator, David Yim established Udders in 2007, opening its first store at United Square. Mr Yim left his previous job to pursue his passion for food and chose to sell ice-cream because it is a “happy” food. In the first four months, the business did poorly but today, they have expanded to include five outlets. Currently, the company is planning to franchise in other countries and develop flavours unique to those cultures.

Udders specialises in alcohol-flavoured ice cream, a niche in the Singaporean ice cream industry, such as Amaretto and Rum Rum Raisin. It also sells non-alcohol based flavours, including strawberry, coffee, pistachio ice cream, and durian ice cream, the last of which has received favorable criticism from Singaporean actress Chermaine Ang. Mr Yim and his partner design their own ice-cream flavours and as of 2011, Udders has at least 30 different ice-cream flavours. In addition, it offers fried foods, in a bid to reach out to a wider range of consumers. They also added Mao Shan Wang durian ice cream in 2008, which is a flavour unique to Singapore and which also happens to be their most popular flavour. Some flavours, such as Cherry Bomb and Lychee Martini, are no longer in supply. Udders had also stopped offering Kimchi ice-cream as it was not popular among customers. The ice-cream chain encourages customers to suggest new flavours they would like, allowing them to participate in Udder’s ice-cream making process. Udders caters ice cream and also organises ice cream-making classes.

Udders makes its ice-cream fresh locally, which contains less fat, cream and milk to cater to Asian consumers. To help reduce manpower costs and boost productivity, machines are used to pasteurise the ice-cream overnight instead of hiring more staff to do it by hand.

The company opened a new café, The Udder Pancake, in November 2014. The café serves pancakes with savoury meats and condiments.

The company organises ice cream-making workshops and provides ice cream-catering services.

Udders has six outlets in Singapore. The franchise has announced plans to branch out into overseas territories, including Australia, China, and Indonesia.

Udders places great emphasis on staff bonding as Mr Yim believes in creating an environment where they can trust each other and can voice their opinions in a safe environment.

Valpo Velvet


Valpo Velvet is a "mom and pop" ice cream shop in Valparaiso, Indiana. It has been owned and run by the Brown family since 1947.

Company

Opened in 1920 as Valparaiso Home Ice Company, the store offered ice and ice cream products. It was owned by Fred Bartz until 1947, upon which time it was purchased by Herbert J. Brown. Since that time ownership of the store has remained in the hands of the Brown family; Gordon Brown began working with his father Herbert in 1949. In 1997 Gordon's sons Mike and Mark expanded the store's parlor to open an ice cream shoppe, however this closed in 2001 so the Brown family could focus on the ice cream business. Throughout the years the Valpo Velvet has operated as a restaurant, a parlor, and in its most recent iteration an ice cream parlor that also serves soups, sandwiches, and salads.

Until 2009 Valpo Velvet ice cream was sold at Walmart stores in the Portage and Michigan City area. Sales for the business increased by $2,000 during their final year at Walmart but despite this success Walmart began allocating less and less room in their store for Valpo Velvet products. During this time co-owner Cathy Brown noted in an interview that, "'Over Labor Day they took us out of the freezer door and moved us to an end cap,' Brown said. 'They tried to say they were trying something new, and, if it did well, they might move us back to the door. I think that was false.'" Brown speculated that their ice cream was removed from stores to be replaced by Walmart's new Great Value brand. With Walmart being one of Valpo Velvet's largest customers, the company had to find another way to make up for lost sales. They decided to reopen the Valpo Velvet Shoppe in 2009, and now they will sell soup and sandwiches in addition to ice cream. 

Family

The Brown family originally immigrated from Switzerland to the United States, where they settled in Monroe, Wisconsin as dairy farmers. Herbert J. Brown grew up in Monroe, Wisconsin and moved to Chicago to work in ice cream production. After realizing he wanted to own his own business, he decided to purchase Valpo Velvet from the previous owner Fred Bartz in 1947. Herbert's son, Gordon W. Brown joined the family business.

Mike Brown, son of Herbert, was only twelve years old when his dad started Brown's Ice Cream Parlor, which was a restaurant. He grew up in Valpo and learned the techniques of running the business of Valpo Velvet from his father.

All of the ice cream is created in the store itself, which was founded in 1897. The store has also supported its local school athletes.

Wilton Candy Kitchen

Wilton Candy Kitchen is a combination ice cream parlor, soda fountain and confectionery store located in Wilton, Iowa, United States. The two-story wood frame building has a gable roof that is obstructed on the main facade by a false front. It retains its interior from 1922. The shop was founded in 1867, and it is considered to be the oldest continuing business of its type in the United States. The business was bought by Gus Nopoulos, a Greek immigrant who worked in his uncle's candy store in Davenport, Iowa before he bought this store in 1910 with Nick Parros. The building already contained the candy making equipment, a soda fountain, and other furnishings. In 1913 Nopoulos bought the building and bought out his partner. The tin ceiling was installed in 1915. He acquired the interior furnishings from the Elite Confectionery in Davenport and had them installed here in 1922. Gus Nopoulos continued to be involved with the shop until his death in 1983. His son George and daughter-in-law Thelma were also involved in the operation of the business.

The shop serves George's homemade ice cream, phosphates, lunches, and candy. In the back of the building is a museum of Wilton's history. The building was individually listed on the National Register of Historic Places in 1993. In 2016 it was included as a contributing property in the Wilton Commercial Historic District.

The Yogoberry (Portuguese pronunciation: [joɣoˈbɛɻʷi], [joɣoˈbɛɾi]) is the largest Brazilian chain of frozen yogurt and smoothie stores, founded in 2007 in Rio de Janeiro by the South Korean sisters Un Ae Hong and Jong Ae Hong.

The chain has more than 100 stores throughout Brazil, and two stores in Iran.

The franchise was created by the sisters Un Ae Hong, a former flight attendant on Varig, and Jong Ae Hong, a nutritionist, both South Korean naturalized Brazilians. The entrepreneurs, who lived in California, realized the growing popularity of frozen yogurt in the United States. Un Ae and Jong Ae believed that the success of the product would be the same in Brazil, where the population is also concerned about seeking a healthy diet.

Jong Ae used her knowledge of nutrition to adapt the formula of frozen yogurt to the Brazilian taste and after more than a year of research to assess the market and the public, Yogoberry opened its first shop in Ipanema, Rio de Janeiro in 2007.

In 2010 the company signed a multi-year contract to expand the brand in the Middle East and in 2011 with the help of their master franchisee Bia o Boro Bastani PJS, Yogoberry opened its very first international shop in Tehran, Iran, which was inaugurated by Ambassador Antonio Luis Espinola Salgado of Brazil.
