Banana beer


Banana beer is an alcoholic beverage made from fermentation of mashed bananas. Sorghum, millet or maize flour are added as a source of wild yeast.

In Kenya, banana beer is known as urwaga, in RD Congo as Kasiksi, in Uganda as mubisi, in Rwanda and Burundi as urwagwa.

Banana beer is sometimes consumed during rituals and ceremonies. A similar product called mwenge is made in Uganda with only bananas and sorghum. It can also be found under the names kasiksi, nokrars, rwabitoke, urwedensiya, urwarimu and milinda kaki.

Banana beer is made from ripe (but not over-ripe) East African Highland bananas. To accelerate the ripening of bananas, a hole is dug in the ground, lined with dried banana leaves which are then set on fire. Fresh banana leaves are laid on top of them, and then the unripe bananas. These are then covered by more fresh banana leaves and pseudostems. After four to six days, the bananas are ripe enough. This method only works in the dry season. During the rainy season, bananas are ripened by putting them on a hurdle near a cooking fire.

There are two types of banana that are used for banana beer: the harsh tasting igikashi and the milder tasting igisahira. The banana beer mixture consists of one third igikashi and two thirds igisahira. Once ripened, the bananas are peeled. If they cannot be peeled by hand, they are not ripe enough. After peeling, the bananas are kneaded until soft. The juice is then filtered to get clear banana juice, which is then diluted with water. Sorghum is ground and lightly roasted and then added to the juice. This mixture is left to ferment for 24 hours and then filtered.

After filtering, the beer is packaged in glass or plastic bottles. In commercial production, the beer may first be pasteurized before packaging to stop fermentation and extend shelf life.

Bedele (also called Buno Bedele) is a town and separate woreda in south-western Ethiopia. Located in the Buno Bedelle Zone of the Oromia Region, this town has a longitude and latitude of 8°27′N 36°21′E / 8.450°N 36.350°E / 8.450; 36.350 and an elevation between 2,012–2,162 metres (6,601–7,093 ft) above sea level.

Ras Tessema Nadew made his capital near Bedele in the early 1900s. Henry Savage Landor passed through the town in 1906. The map attached to C. W. Gwynn's account of his 1908/09 triangulation survey of southern Ethiopia shows that Bedele had a telegraph station, connected by way of Gore. The Buno Bedele Health Center was built in 1966 with a majority of Swedish donations.

The road connecting Bedele to Agaro, 96 kilometres (60 mi) long, was completed in 1968 at a cost of 12 million dollars (Ethiopian), by the French company Razel Frères. Construction on a road to Metu began around 1970.

Bedele is also the headquarters for the Bedele Brewery. Founded in 1993, Bedele is a formerly government-owned corporation, producing about 75 million bottles of beer each year for domestic and export customers; it was bought by Heineken in August 2011.

In February 2009, Regional President Abadula Gemeda laid the cornerstone for a new cultural center in Bedele. At the same time, he officially opened the new technical and vocational college in the town.
