Baiting Hollow is a census-designated place (CDP) roughly corresponding to the hamlet by the same name in the Town of Riverhead in Suffolk County, New York, United States. The CDP's population was 1,642 at the 2010 census.
The popular Splish Splash Water Park is located five minutes from Baiting Hollow.
According to the United States Census Bureau, the CDP has a total area of 3.2 square miles (8.3 km2), all of it land.
As of the census of 2000, there were 1,449 people, 600 households, and 429 families residing in the CDP. The population density was 448.7 per square mile (173.2/km²). There were 962 housing units at an average density of 297.9/sq mi (115.0/km²). The racial makeup of the CDP was 96.27% White, 1.38% African American, 0.55% Asian, 0.97% from other races, and 0.83% from two or more races. Hispanic or Latino of any race were 4.00% of the population.
