Acme Bread Company

imageAcme Bread Company

The Acme Bread Company (also known as Acme Bread) is a Berkeley, California-based bakery that is one of the pioneers of the San Francisco Bay Area's "Bread Revolution", which in turn created the modern "artisan bread" movement in America, and remains a "benchmark" for commercial handmade bread.

Founder Steve Sullivan grew up in Los Gatos, California, and enrolled at the University of California, Berkeley in 1975, intending to major in rhetoric. He earned money as a busboy at Chez Panisse. While riding his bike through England during a summer trip to Europe he bought English Bread and Yeast Cookery, Elizabeth David's 1977 book on breadmaking and bread history. Excited by the book, and wanting to recreate the bread he had enjoyed in Paris, he began experimenting with baking for himself. In 1979, when Chez Panisse's then-supplier, the Cheese Board Collective, could not keep up with its demands, Sullivan became the restaurant's in-house breadmaker. However, his breadmaking and the restaurant's food preparation were both competing for the restaurant's limited physical space. In 1983 he left, with the restaurant's encouragement, to open his own company, Acme. Jeremiah Tower, then head chef, encouraged Sullivan to study breadmaking at Narsai David's bakery. He and wife Susan launched Acme with approximately $180,000 of seed capital, half funded by Doobie Brothers guitarist Patrick Simmons through a leaseback arrangement.

Steve and Susan Sullivan took a honeymoon in France the year before starting the business. During their visit to a winery in Bandol, the son of the owners suggested they make their mother starter from the natural yeast of wine grapes. On returning home, he made the starter Acme continues to use in all of its bakeries by collecting unsulfured Cabernet Sauvignon and Zinfandel grapes from a vineyard his father owned, and adding them to a flour and water mixture.

Alvarado Street Bakery is a worker-owned bakery located in Petaluma, California that produces certified organic whole grain breads and bagels. Alvarado was featured in the 2009 Michael Moore documentary, Capitalism: A Love Story.

Alvarado is organized as a worker cooperative and each employee receives one share in the cooperative. The shares grant each employee an equal vote on business matters, including employee benefits, salaries and the reinvestment of profits. As of 2009, more than half of the employees had been with the company for over 15 years and the average worker earns between $65,000 and $70,000 a year.

Alvarado Street Bakery began in 1977 as a part of an employee-owned non-profit business called the Red Clover Worker's Brigade, an umbrella organization for several naturals foods businesses in the San Francisco Bay Area. By 1981 only two businesses still operated, Alvarado Street Bakery and Santa Rosa Community Market. Five of the eight workers of the bakery separated from the market to found the Semper Virens Bakery Food Cooperative, Inc. which does business under the name of Alvarado Street Bakery. The name comes from a knocked over Alvarado Street sign from Venice Beach, Los Angeles from a sprouted wheat berry delivery run.

Boudin Bakery

imageBoudin Bakery

Boudin Bakery (Anglicized pronunciation: "boo-DEEN") is a bakery based in San Francisco, California, known for its sourdough bread (self-proclaimed as the "Original San Francisco Sourdough French Bread"). It was established in 1849 by Isidore Boudin, son of a family of master bakers from Burgundy, France, by blending the sourdough prevalent among miners in the Gold Rush with French techniques.

Steven Giraudo, an artisan baker from Italy whose first job in America was at Boudin, bought the bakery in 1941 but later sold it. After a series of ownership changes the bakery was bought by two of Giraudo's sons through an investment bank.

The bakery has locations on Fisherman's Wharf near San Francisco Bay, Disney California Adventure Park, and 30 other cafés scattered throughout California. The main bakery in San Francisco is in the Richmond District on the corner of 10th Avenue and Geary Boulevard. The Boudin Bakery hosts the attraction "The Bakery Tour" at Disney California Adventure, where tourists are given a tour about how sourdough bread is produced. The bakery still uses the same starter yeast-bacteria culture it developed during the California Gold Rush.

The first outlet outside California at the Yorktown Center mall in Lombard, Illinois closed in mid-2009 after about a year.

In the 1997 theatrical film Home Alone 3, a bag of "the famous San Francisco sourdough bread" is central to the plot. Mrs. Hess (Marian Seldes) buys a loaf of the bread, while a quartet of terrorists uses the same type of French-flag design bag to smuggle a stolen computer chip contained in a radio-controlled car. The two bags get mixed up at airport security, and the terrorists are thwarted in retrieving the car because a large number of people in the airport terminal have bags from the bakery.

The Donut Hole

The Donut Hole is a bakery and landmark in La Puente, California. An example of programmatic architecture, the building is shaped like two giant donuts through which customers drive to place their orders. The bakery is one of the most photographed donut shops in the United States.

The first Donut Hole opened in 1963, in La Puente, California. According to one source, the shop in La Puente was the second to open, in 1968, and was followed by three others. However, various sources disagree and date the building's original construction from 1947 to 1958 to 1962. What is certain is that the donut chain went out of business in 1979. The Covina branch was completely remodeled and the others were demolished, and only the La Puente location remains today as a working bakery.

It is a local tradition for newlyweds to drive through the donuts; some cite good luck as the reason, while others credit the sexual symbolism. The building has been struck by cars several times in its history, most recently in 2004 when an out-of-control car crashed through one of the donut facades.

The building was featured in the movie Moving Violations where Chief Fromm's car was bashed.

In the opening scenes of Dan Akroyd and Tom Hanks' 1987 classic Dragnet the Donut Hole is shown.

Helms Bakery

imageHelms Bakery

The Helms Bakery in Culver City, California was a notable industrial bakery of Southern California that operated from 1931 to 1969.

In 1926, Paul Helms of New York took an early retirement for health reasons and moved his family to Southern California and its mild climate. Helms started construction on a building between Washington and Venice Boulevards in 1930 and, on March 2, 1931, the Helms Bakery opened with 32 employees and 11 delivery coaches (trucks).

By the next year, the Helms Bakery had become the "official baker" of the 1932 Summer Olympics when Paul Helms won a contract to supply bread for the 1932 games in Los Angeles. His slogan was "Olympic Games Bakers - Choice of Olympic Champions." Four years later in time for the 1936 Summer Olympics Germany asked Helms for his bread recipes to feed to the German Olympic team. His relationship with Olympians continued in later years, the U.S. teams at London and Helsinki requested his bread be served. Early Helms vehicles sported the Olympic symbol, and it also appeared on, and was mentioned in, the Helms logo on the bread wrappers, the company logo and sign.

Despite never being sold in stores, Helms baked products soon became known to millions of consumers. The Helms motto was "Daily at Your Door" and every weekday morning, from both the Culver City facility and a second Helms Bakery site in Montebello, dozens of Helms coaches, painted in a unique two-tone scheme, would leave the bakery for various parts of the Los Angeles Basin, some going as far as the eastern San Gabriel Valley. This is remarkable because the network of freeways had not yet been built, so the trip might take an hour or more. One of these coaches is on display at the Peterson Automotive Museum in Los Angeles,Lyon Air Museum, in Santa Ana, and the LeMay Car Museum in Tacoma, WA.
