Halloren Chocolate Factory


The Halloren Chocolate Factory (German: Halloren Schokoladenfabrik) is the oldest German chocolate factory. The first mention of the firm is recorded in 1804. The firm was founded in Halle, Saxony-Anhalt where its headquarters are today.

The most famous product is the "Halloren-Kugeln", or Halloren globes, which receive their name from the early salt workers, whose buttons the chocolates resemble. The brand was especially popular in the former German Democratic Republic and remained popular after reunification.

In 2013 the company secured a majority share in the Belgian chocolate producer Bouchard.

The factory also features the Halloren Schokoladenmuseum (Halloren Chocolate Museum), which includes exhibits about the history of chocolate, chocolate making equipment, molds, and a view of the factory process.

Hachez


Based in Bremen in northern Germany, Hachez is (after Lindt) the second largest German manufacturer of chocolate products.

The company was founded by Joseph Emile Hachez in 1890. The Westerstrasse headquarters was located in the centre of Bremen. In the year of 1923, Hachez was walking and took notice of the autumn leaves. It inspired him to recreate the chocolate to look similar to the leaves he had seen earlier.

The cocoa that is used comes from the world's leading growing regions, but it mainly comes from South America. The flavor is being extracted, the hot-air currents are used in traditional roasting drums. When the cocoa is ground and rolled, it is an average diameter of 0.0010 to 0.0014 mm. The conching of the cocoa then takes place for up to 72 hours. The confectioners then handcraft the various sweets that are produced. Altogether, it takes over 100 hours to produce and complete the finished product

It produces a range of products containing either 55.5, 77, or 88% cocoa solids. Within the German market, Hachez is notable for its unusual flavouring combinations. Currently available varieties include salted peanut and strawberry and green pepper.

Hamodava Coffee Company (Hamodava) is a beverage manufacturer specialising in coffee and based in Auckland, New Zealand. Hamodava distribute exclusively Fair Trade and Organic certified products. Salvation Army officer Herbert Booth started the business in Melbourne, Australia in 1897 and it ran successfully until 1929. Hamodava was relaunched in September 2016, with the company's operations being moved to Auckland.

Herbert Henry Howard Booth a Salvation Army officer, and son of its founder William Booth, was appointed to the command of the organisations operations in Australia and New Zealand. H Booth founded the Hamodava Tea Company in 1897 along with Bundaberg native Ashley Lamb as a means to provide funds to support the work of The Salvation Army. Lamb sourced tea from Sri Lanka, and blended and packed the product for retail in Melbourne. With the success of the original product, Hamodava also introduced both a cocoa and a coffee product to the line two years later. The Hamodava Tea Company continued strong trading up until 1929 when international tea prices collapsed, and with the onset of the great depression the company was disbanded. The name Hamodava comes from the Signhalese word for 'army'.

Hamodava is notable for its role in pioneering ethical and fair trade practices. The company not only sought to pay a fair price to the farmers who grew the produce, but also developed a scheme by which the farmers could make payments towards purchasing plantations from The Salvation Army.

In September 2016 The Salvation Army relaunched Hamodava.

The Hamodava Cafe, is situated on Bourke Street in Melbourne, Australia. The cafe operates out of a heritage building that once housed the original company in the late 1800's. It is a community centre providing breakfast and lunch, as well as support to people from all walks of life, especially those living on the margins of society.

The Hershey Company, known until April 2005 as the Hershey Foods Corporation and commonly called Hershey's, is one of the largest chocolate manufacturers in North America. Its headquarters are in Hershey, Pennsylvania, which is also home to Hershey's Chocolate World. It was founded by Milton S. Hershey in 1894 as the Hershey Chocolate Company, a subsidiary of his Lancaster Caramel Company. Hershey's products are sold in over 60 countries worldwide. In addition, Hershey is a member of the World Cocoa Foundation. It is also associated with the Hersheypark Stadium and the Giant Center.

After completing an apprenticeship to a confectioner in 1873, Milton S. Hershey founded a candy shop in Philadelphia. This candy shop was only open for six years, after which Hershey apprenticed with another confectioner in Denver, where he learned to make caramel. After another failed business attempt in New York, Hershey returned to Pennsylvania, where in 1886 he founded the Lancaster Caramel Company. The use of fresh milk in caramels proved successful, and in 1900, after seeing chocolate-making machines for the first time at the 1893 World's Columbian Exposition in Chicago, Hershey sold his caramel company for $1,000,000 (equal to $28,788,000 today), and began to concentrate on chocolate manufacturing, stating to people who questioned him, "Caramels are just a fad, but chocolate is a permanent thing."

In 1896, Milton built a milk-processing plant so he could create and refine a recipe for milk chocolate candies. In 1899, he developed the Hershey process which is less sensitive to milk quality than traditional methods, and in 1900, he began manufacturing Hershey's Milk Chocolate Bars, also called Hershey's Bars or Hershey Bars.

Hollywood Candy Company


The Hollywood Candy Company, or Hollywood Brands, was an American confectionery company formed in Hollywood, Carver County, Minnesota, in 1912 by Frank Martoccio.

Martoccio, head of the F.A. Martoccio Macaroni Company acquired a defunct candy factory in 1911 for the sole purpose of replacing one of his own factory's machines that had burned out. Martoccio was talked into buying the entire Pratt and Langhoft Candy plant and found himself in the confectionery business. He purchased another candy company, the Pendergast Candy Company of Minneapolis in 1927, changing the name to Hollywood Brands in 1933. The Pendergast Company had discovered the method of making a fluffy nougat for candy bars that was copied by Frank Mars for his Milky Way bars. Martoccio invented a synthetic coating for his candy bars to keep them from melting in warm temperatures. Martoccio used only the very best ingredients—real cocoa butter, eggs, etc., and was still able to sell his milk chocolate bars for 3 cents compared to the 5 cent Hershey bar (1955). That was not continued after the company was sold in 1967.

Hollywood moved to Centralia, Illinois, in 1938. During the 1950s, the Hollywood Candy Company owned a Crosley Super Sport which was painted to look like the Zero candy bar wrapper and employed a midget, to impersonate a character called Zero and drive around advertising the candy bar. In 1967 the Martoccio family sold Hollywood Brands to Consolidated Foods, later Sara Lee. The Centralia plant was destroyed in a fire in 1980.

In 1988 Hollywood Brands was acquired by the Leaf Candy Company, then later became part of The Hershey Company in 1996.

Hotel Chocolat is a British chocolatier and cocoa grower, with over seventy shops in the United Kingdom. Hotel Chocolat is the only company in the United Kingdom to grow cocoa on its own plantation.

In 1988, Angus Thirlwell and Peter Harris began designing and selling mints as "MMC", before moving to chocolates, some five years later. Rebranded as "Geneva Chocolates", the current co-founders of Hotel Chocolat adapted trade to the catalogue-based world and before long, had steered towards the name "Choc Express". Throughout these next few years, Angus and Peter had turned their focus on making this brand of exclusive chocolates available to UK consumers.

In 1998, the Chocolate Tasting Club was launched in Britain, and now currently has around 100,000 members. To date, the Tasting Club has trialled over 1,500 different recipes. As detailed on their website, the Chocolate Tasting Club sends out boxes to customers all over the country, and each month.

In 2003, Choc Express rebranded as Hotel Chocolat and launched its first retail store in the centre of Watford. The company then grew initially to having four stores in the East Anglian area, with stores in Milton Keynes, Cambridge and St Albans opening between 2005 and 2006. Today, the company has over 70 around the UK.

In 2006, the company officially acquired the Rabot Estate in Saint Lucia, West Indies, and is, to date, the only company in the UK to own its own cocoa plantation. This plantation is one of the reasons given for the company choosing not to be Fair Trade-accredited, as only smallholdings are allowed.

In 2011, Hotel Chocolat opened its Boucan Hotel in Saint Lucia, West Indies. The hotel sits on the Rabot Estate which is perched high up between the Piton mountains. The hotel currently has six lodges and a cocoa-inspired Boucan Restaurant.

Hotel Chocolat has been awarded Emerging Retailer of the Year by Retail Week and nominated as one of the UK’s CoolBrands. The company was also awarded the silver prize in the 2009 Academy of Chocolate awards.

In September 2012, The company opened their second Scottish store in Aberdeen.

Jean Trogneux is a French chocolatier, run by five generations of the Trogneux family, and based in Place Notre Dame, in the centre of Amiens, France. They are best known for their macarons, of which they manufacture two million every year. As well as seven outlets in Amiens, they have shops in other cities in Picardy and the north of France – Lille, Arras and Saint-Quentin.

Trogneux have seven retail shops in Amiens, as well as Lille, Arras and Saint-Quentin, in Picardy and the north of France.

Jean Trogneux produces chocolates, macarons d'Amiens, douceurs de saison and sells jams, pâtés, honey and other regional specialities. Altogether they sell 800 different products, and in 2015 sold more than two million macarons.

They are particularly known for their macarons, and with family member Brigitte Trogneux married to Emmanuel Macron, the President of France, this has led to inevitable wordplay in the press, "On avait déjà le macaron d'Amiens. Maintenant, on a aussi le Macron d'Amiens !" (We already had the macaron of Amiens. Now we also have the Macron of Amiens!)

The business was founded in 1872, by Jean-Baptiste Trogneux, a baker and patissier, in the quartier Gambetta-Delambre-Duméril, in the centre of Amiens. His son created the recipe for macaron d'Amiens, which is still the company's flagship product.

Brigitte Trogneux's parents were Simone (née Pujol; 1910–1998) and Jean Trogneux (1909–1994), who owned the five-generation Chocolaterie Trogneux, and the company was renamed Jean Trogneux after Brigitte's father.

The business is now run by Jean-Alexandre Trogneux, nephew of Brigitte Trogneux, and the fifth generation in charge of the family firm.
