Early perception of Gregorys saw them "as Starbucks clone, shops in a busy part of the city" but with its rapid expansion, the New York City originated shop has seen a growth of 18 and counting locations in 10 years.

Hard Times Cafe is a collectively owned restaurant in the Cedar-Riverside neighborhood of Minneapolis, Minnesota. It is known for its punk and hippie ideology, its gritty ambiance, and its large selection of vegan and vegetarian food. It is open 22 hours a day, closing only between the hours of 4 am and 6 am.

Hard Times was founded as a 24-hour cafe in 1992 by eight employees of The Urban Peasant, a failing restaurant at that location. Working with the vision of a place where all kinds of people could come together to drink coffee and eat vegetarian food, they transformed the restaurant into what is now Hard Times. The location is a staple of the West Bank neighborhood, and a popular gathering place for local artists, musicians, students, and political activists.

Minneapolis Second Ward City Council Member Cam Gordon holds open office hours in the cafe on the first Tuesday morning of each month.

Hard Times faced closing in January 2000, when several arrests were made as a result of a drug sting at the cafe. The owners closed its doors voluntarily in the aftermath, but faced problems with the city when attempting to reopen. The owners met all of the health and fire codes necessary to reopen, but refused to sign a contract obligating them to close at 2 am and hire a licensed security guard. A compromise was eventually made, with Hard Times closing its doors for two hours each night.

Hard Times closed for remodeling in August 2007, after a recommendation from a health inspector that they update their ventilation system. The original plan was to be closed for a matter of weeks, but delays in shipping, unforeseen circumstances, and additional recommendations by the city kept the doors closed for three months beyond the intended opening date. The cafe received financial assistance from Seward Community Cafe, a fellow Minneapolis worker cooperative. Hopeful patrons were informed of each successive delay by handwritten notes posted in the cafe windows. The cafe reopened at midnight December 16, 2007 with a new ventilation system and dozens of other recommended improvements.

Heart Coffee Roasters is a chain of three cafes and a coffee roasting company based in Portland, Oregon, in the United States. It was established in 2009 by Wille and Rebekah Yli-Luoma.

Wille and Rebekah Yli-Luoma opened Heart in 2009. Heart's original location, known as the Eastside Cafe, is located at 2211 East Burnside Street in Portland's Kerns neighborhood. Its second location, known as the Westside Cafe, open in 2013 and is located at 537 Southwest 12th Avenue in downtown Portland's West End. The company has leased a third location at the intersection of Southeast 52nd Avenue and Woodstock Boulevard, in the neighborhood.

Heart offers green coffee from Africa, Central America, and South America. The coffee is roasted lightly "to preserve their acidity and subtler flavors". Drinks are made entire in-house, including add-ins like cashew-almond milk, chocolate, and syrups. Heart's motivation is to provide "uncompromising quality —from the source to the final cup". The company only sells coffee at peak season "to avoid the smokier flavors that can compromise the complexity" of the beans.

Condé Nast Traveler called Heart's drinks "uncommonly clean and complex and said, "Chemex- and Aeropress-brewed 'pour-over' coffees are perhaps the best way to sample the results, though espresso drinks are excellent here, too."

In 2013, Dan Gentile of Thrillist included Heart in his list of "The Top 10 Coffee Roasters in the Nation, as Voted by Super-Serious Coffee Nerds". He also included Heart in his 2016 list of "The 21 Best Coffee Roasters in the Country", writing: "Portland isn't in short supply of sleekly designed coffee shops, but in addition to a design sense that would make a Scandinavian proud, Heart's coffee shop is literally built around a functioning black Probat roaster that fills the space with the smell of not-too-light, and definitely not-too-dark coffees."

In 2016, Eater.com's Emily McIntyre included Heart on her list of the "20 of the Best Coffee Shops in Portland". She wrote, "Few cafes have such a strong aesthetic and presentation as Heart on Burnside. Enter and think yourself lucky, because the rare espresso machine (currently Kees van der Westen), the expensive, simple menu, the beast of a vintage coffee roaster, and the 'do not touch signs' have the effect of creating an exclusive experience... While I recommend any seasonal drink here (and the summertime paleo affogato is delicious), my go-to at Heart is a cup of drip coffee."

Innisfree Poetry Bookstore and Cafe


Innisfree poetry bookstore and cafe (Innisfree's) is a poetry only bookstore and local coffee cafe. It is located on the University Hill in Boulder, Colorado, on 13th and Pennsylvania avenue "across from The Sink and Buchanan's Coffee Pub." Innisfree is one of only three bookstores in the United States dedicated exclusively to poetry, and offers a selection of both adult poetry as well as poetry written for young adult's and children. The name of the store comes from the poem Lake Isle of Innisfree by William Butler Yeats. In order to connect with the local poetry community the store itself hosts twice weekly poetry readings by both beginning writers as well as established poets. In addition to poetry, Innisfree offers locally roasted Conscious Coffee which won the 2011 roaster of the year award from Roast magazine.

Bewley's is an Irish hot beverage company, located in Dublin and founded in 1840, which operates internationally. Its primary business operations are the production of tea, coffee and the operations of cafés. Bewley's has operations in Ireland, the UK and the United States; in the Boston area under the Rebecca's Cafe name and in California as Java City.

The Bewley family were Quakers who originated in France and moved to Ireland in the 18th century. They entered the tea trade, and in 1835, Samual Bewley and his son Charles landed 2,099 chests of tea shipped from Canton in China. The Bewley family subsequently expanded into the coffee trade and in the late 19th century, they opened cafes in South Great George's Street in 1894, and Westmoreland Street in 1896. The flagship Grafton Street café was opened by Ernest Bewley in 1927. The Grafton Street building had once housed Whyte's Academy, a school whose pupils included the Duke of Wellington and Robert Emmet. By 1999, the company operated more than twenty cafes in Ireland and six overseas. In 2010 they employed around 800 people worldwide, although 140 jobs were lost in early 2015 with the closure of the Bewley's Oriental Cafe on Grafton Street in Dublin.

The company has operated a café on Dublin's Grafton Street since 1927. Sometimes described as a "Dublin landmark", this outlet closed in November 2004, before reopening in May 2005 after refurbishment and restoration. In 2007, its lease was challenged by the landlord, Ickendel Limited after extensive works were carried out to the historic building without landlord consent. The Grafton Street premises closed again for refurbishment in February 2015, with works that were expected to reduce the capacity of the café by half. By October of that year, Bewley's announced that the length of the closure would extend, and by mid-2016, the date of reopening had been pushed back to the end of 2016. Ultimately, on 1 November 2017, Bewley's Grafton Street was reopened after the "1000 day" multi-million-euro refurbishment.

The company acquired the Rebecca's Cafe chain in the Boston, Massachusetts area in 1997, and expanded to the west coast in 2000 with the purchase of the Java City brand.

Bewley's entered the UK market in 2011 following the acquisition of speciality coffee supplier, Darlington's before acquiring Bolling Coffee in 2013 and UK foodservice distributor, Peros in 2015.
