Carbajal was born in Ciudad de los Reyes, (Lima, Perú), son of Pedro López Valero and María de Carbajal, belonging to a noble family of Spanish conquerors. His wife was María Salas, daughter of Francisco de Salas Reynoso and Leonor Correa.

Carbajal who was colleague of Hernandarias de Saavedra, Governor of Río de la Plata, also had served as Commander in Chief an armed contingent against Indian tribes, to help Juan de Garay (son of the founder), in the city of Corrientes. The mission was a failure and Carbajal, had to retire with his men. He had served in expeditions against the Aboriginal tribes, in almost all provinces including Salta, Corrientes and Santa Fe.

In 1612 Carbajal was appointed Faithful Executor of the Cabildo, and served as alcalde of 2nd vote in 1617. Later was appointed Alcalde of Buenos Aires in 1628. And on November 9, 1631, he was appointed Judge Campaign.

Gonzalo de Carbajal was appointed on May 21, 1622 as Lieutenant Governor of Santa Fe Province. Some time later he served as Lieutenant Governor and General in Buenos Aires. He also fulfilled the functions of Treasurer, Judge, Council and Royal Official in the Río de la Plata.

He had owned one of the first pulpería, in the Río de la Plata, where the government withdrew the permit admission to black people in their establishment.
