Claudio Corallo (born 1951) is an Italian businessman and an agricultural engineer who resides in São Tomé and Príncipe. He founded a chocolate and coffee refinery called Claudio Corallo Cacao é Coffee.

Corallo was born in the city of Florence, capital of Tuscany in Italy. He was trained as an agricultural engineer in 1987 at the Instituto Agronómico para o Ultramar (Agronomical Institute of the Overseas).

After its foundation, he worked as a diver in a dredging company in Trieste, later in an Italian consulting company. In 1974, he went to what was Zaire (now the Democratic Republic of the Congo). The government of Mobutu Sese Seko contractred him as an investigator, took part in technical assistance with small rural producers. He resolved and fixed some in the country and bought 1,250 hectares of coffee plantations in the Lomela region. The region was difficult to access from Kinshasa, capital of today's Democratic Republic of the Congo, Lomela by the Congo River (the only means of access), he used the canoe which took two weeks to reach. Claudio planned to build a boat which he named it the DB1 which reduced travel time. With political changes in Zaire, he was forced to leave the country.

On December 1992, he moved to São Tomé and Príncipe where he started to cultivate cocoa which was already done in the archipelago. Some investigations between the varieties of cocoa, including its productions in Bolivia, where he made for a short time, it testified the variety of São Tomé and Príncipe having a different quality. Since its various tests on bitterness he founded that were causing processing failures, moisture storage and the country's equatorial heat. Different forms of tests of fermentation for a new cocoa paste, he built a lab for roasting, peeling and rinding.

He bought an abandoned cocoa plantation for 120 hectares (over a square kilometer) in Terreiro Velho (Old Third) next to Novo Estrela on the island of Príncipe. He cultivated on that island and had produced a product with high quality which was considered the greatest chocolate on Earth, controlled all the production process from the tree to the tablet.

He had uncovered which done only on the island of São Tomé and has produced coffee in high quality, buying the property in Nova Moca southwest of Monte Café, the coffee producing area. Having its coffee and chocolate productions and built a refined gastronomy industry, Claudio Corallo Cacao e Coffee.
