Tastes like chicken


"Tastes like chicken" is a declaration used when trying to describe the flavour of an unusual food. The expression has been used so often in popular culture that it has become a cliché. As a result, the phrase is also sometimes used to provide incongruous humor, by being used to describe foods or situations where it has no real relevance.

As an explanation of why unusual meats would taste more like chicken than common alternatives such as beef or pork, different possibilities have been offered. One idea is that chicken has a bland taste because fat contributes more flavour than muscle (especially in the case of a lean cut such as a skinless chicken breast), making it a generic choice for comparison. Also, chicken reportedly has lower levels of glutamates that contribute to the "savory" aspect of taste known as umami; processing or tenderizing other meats would also lower glutamate levels and make them taste more like chicken.

Another suggestion, made by Joe Staton of the Museum of Comparative Zoology, is that meat flavors are fixed based on the "evolutionary origin" of the animal. Specifically, he noted that tetrapods largely taste like chicken, whereas other animals usually do not. Accordingly, birds (the most numerous form of meat by type) would (in most cases) naturally taste more like chicken than mammals. Furthermore, because dinosaurs are ancestral to birds, their meat would hypothetically have also tasted like chicken. However, the meat of other fowl often tastes nothing like chicken; for example, pheasant meat is described as a "unique" flavor and ostrich meat is thought to taste very similar to beef.

Seafood, however, would logically have a more distinctive flavor. Also, although mammals are tetrapods, very few mammals taste like chicken, which implies that there had been a mutation that changed their flavour on that branch of the evolutionary tree.

A taste receptor is a type of receptor which facilitates the sensation of taste. When food or other substances enter the mouth, molecules interact with saliva and are bound to taste receptors in the oral cavity and other locations. Molecules which give a sensation of taste are considered "sapid".

Taste receptors are divided into two families:

Combinations of these receptors in dimers or other complexes contributes to different perceptions of taste.

Visual, olfactive, “sapictive” (the perception of tastes), trigeminal (hot, cool), mechanical, all contribute to the perception of taste. Of these, transient receptor potential cation channel subfamily V member 1 (TRPV1) vanilloid receptors are responsible for the perception of heat from some molecules such as capsaicin, and a CMR1 receptor is responsible for the perception of cold from molecules such as menthol, eucalyptol, and icilin.

The gustatory system consists of taste receptor cells in taste buds. Taste buds, in turn, are contained in structures called papillae. There are three types of papillae involved in taste: fungiform papillae, foliate papillae, and circumvallate papillae. (The fourth type - filiform papillae do not contain taste buds). Beyond the papillae, taste receptors are also in the palate and early parts of the digestive system like the larynx and upper esophagus. There are three cranial nerves that innervate the tongue; the vagus nerve, glossopharyngeal nerve, and the facial nerve. The glossopharyngeal nerve and the chorda tympani branch of the facial nerve innervate the TAS1R and TAS2R taste receptors.

Tea tasting


Tea tasting is the process in which a trained taster determines the quality of a particular tea. Due to climatic conditions, topography, manufacturing process, and different clones of the Camellia sinensis plant (tea), the final product may have vastly differing flavours and appearance. These differences can be tasted by a trained taster in order to ascertain the quality prior to sale or possibly blending tea.

The ISO 3103 standard describes a standardised method for brewing teas in order to make meaningful sensory comparisons between them. It is not a particularly useful standard for many teas, however, requiring a six-minute brewing time and boiling water, neither of which are recommended for green teas (usually brewed at < 90 °C and for under 3 minutes). Tea tasters would instead usually taste teas which have been brewed according to the recommendations of the producer.

A tea taster uses a large spoon and noisily slurps the liquid into his/her mouth - this ensures that both the tea and plenty of oxygen is passed over all the taste receptors on the tongue to give an even taste profile of the tea. The liquid is then usually spat back out into a spitoon before moving onto the next sample to taste. The flavour characteristics and indeed leaf colour, size and shape are graded using a specific language created by the tea industry to explain the overall quality. Generally speaking, once the quality has been tasted/graded, each tea company places a value on it based on market trends, availability and demand.

Tongue map


The tongue map or taste map is a common misconception that different sections of the tongue are exclusively responsible for different basic tastes. It is illustrated with a schematic map of the tongue, with certain parts of the tongue labeled for each taste. Although widely taught in schools, this was scientifically disproven by later research; all taste sensations come from all regions of the tongue, although different parts are more sensitive to certain tastes.

The theory behind this map originated from a paper written by Harvard psychologist D.P Hanig, which was a translation of a German paper, Zur Psychophysik des Geschmackssinnes, which was written in 1901. The unclear representation of data in the former paper suggested that each part of the tongue tastes exactly one basic taste.

The paper showed minute differences in threshold detection levels across the tongue, but these differences were later taken out of context and the minute difference in threshold sensitivity was misconstrued in textbooks as a difference in sensitivity.

While some parts of the tongue may be able to detect a taste before the others do, all parts are equally good at conveying the qualia of all tastes. Threshold sensitivity may differ across the tongue, but intensity of sensation does not.

The same paper included a taste bud distribution diagram that showed a "taste belt".

In 1974, Virginia Collings investigated the topic again, and confirmed that all the tastes exist on all parts of the tongue.

The misinterpreted 1901 diagram in the article that sparked this myth shows human taste buds distributed in a "taste belt" along the outside of the tongue.

Prior to this, A. Hoffmann had concluded, in 1875, that the dorsal center of the human tongue has practically no fungiform papillae and taste buds, and it was this finding that the diagram describes.

Umami


Umami (/uˈmɑːmi/), or savory taste, is one of the five basic tastes (together with sweetness, sourness, bitterness, and saltiness). It has been described as brothy or meaty.

A loanword from the Japanese (うま味?), umami can be translated as "pleasant savory taste". This was coined in 1908 by Japanese chemist Kikunae Ikeda from a nominalization of umai (うまい) "delicious". The compound 旨味 (with mi (味) "taste") is used for a more general sense of a food as delicious.

People taste umami through taste receptors specific to glutamate. Glutamate is widely present in savory foods, such as meat broths and fermented products, and commonly added to some foods in the form of monosodium glutamate (MSG). Since umami has its own receptors rather than arising out of a combination of the traditionally recognized taste receptors, scientists now consider umami to be a distinct taste.

Scientists have debated whether umami was a basic taste since Kikunae Ikeda first proposed its existence in 1908. In 1985, the term umami was recognized as the scientific term to describe the taste of glutamates and nucleotides at the first Umami International Symposium in Hawaii. Umami represents the taste of the amino acid L-glutamate and 5’-ribonucleotides such as guanosine monophosphate (GMP) and inosine monophosphate (IMP). It can be described as a pleasant "brothy" or "meaty" taste with a long lasting, mouthwatering and coating sensation over the tongue. The sensation of umami is due to the detection of the carboxylate anion of glutamate in specialized receptor cells present on the human and other animal tongues. Its effect is to balance taste and round out the overall flavor of a dish. Umami enhances the palatability of a wide variety of foods. Glutamate in acid form (glutamic acid) imparts little umami taste, whereas the salts of glutamic acid, known as glutamates, give the characteristic umami taste due to their ionized state. GMP and IMP amplify the taste intensity of glutamate. Adding salt to the free acids also enhances the umami taste.

Warmed-over flavor


Warmed-over flavor is an unpleasant characteristic usually associated with meat which has been cooked and then refrigerated. The deterioration of meat flavor is most noticeable upon reheating. As cooking and subsequent refrigeration is the case with most convenience foods containing meat, it is a significant challenge to the processed food industry. The flavor is variously described as "rancid," "stale," and like "cardboard," and even compared to "damp dog hair." Warmed-over flavor is caused by the oxidative decomposition of lipids (fatty substances) in the meat into chemicals (short-chain aldehydes or ketones) which have an unpleasant taste or odor. This decomposition process begins after cooking or processing and is aided by the release of naturally occurring iron in the meat.

The appearance of warmed-over flavor begins as lipids, primarily lipids from the cell membrane of cells in the meat, are attacked by oxygen. This process is aided by the release of iron from iron-containing proteins in the meat, including myoglobin and hemoglobin. The iron is released by the heat of cooking, or by mechanical grinding. The free iron then acts as a catalyst, or promoter, of oxidation reactions. The reactions break down some of the fats in the meat to form primary oxidation products. These chemicals are not directly responsible for the objectionable taste. Instead, they subsequently further decompose to secondary oxidation products including "alcohols, acids, ketones, lactones and unsaturated hydrocarbons which produce the [warmed-over flavor]." Many of these compounds, including pentanal, hexanal, pentylfuran, 2-pentylfuran, 2-octenal and 2,3-octanedione have a strong odor and can be tasted at concentrations as low as 1 part per billion.

Wine tasting


Wine tasting (often, in wine circles, simply tasting) is the sensory examination and evaluation of wine. While the practice of wine tasting is as ancient as its production, a more formalized methodology has slowly become established from the 14th century onwards. Modern, professional wine tasters (such as sommeliers or buyers for retailers) use a constantly evolving specialized terminology which is used to describe the range of perceived flavors, aromas and general characteristics of a wine. More informal, recreational tasting may use similar terminology, usually involving a much less analytical process for a more general, personal appreciation.

A wine's overall quality assessment, based on this examination, follows further careful description and comparison with recognized standards, both with respect to other wines in its price range and according to known factors pertaining to the region or vintage; if it is typical of the region or diverges in style; if it uses certain wine-making techniques, such as barrel fermentation or malolactic fermentation, or any other remarkable or unusual characteristics.

Whereas wines are regularly tasted in isolation, a wine's quality assessment is more objective when performed alongside several other wines, in what are known as tasting "flights". Wines may be deliberately selected for their vintage ("horizontal" tasting) or proceed from a single winery ("vertical" tasting), to better compare vineyard and vintages, respectively. Alternatively, in order to promote an unbiased analysis, bottles and even glasses may be disguised in a "blind" tasting, to rule out any prejudicial awareness of either vintage or winery.

To ensure impartial judgment of a wine, it should be served blind – that is, without the taster(s) having seen the label or bottle shape. Blind tasting may also involve serving the wine from a black wine glass to mask the color of the wine. A taster's judgment can be prejudiced by knowing details of a wine, such as geographic origin, price, reputation, color, or other considerations.
