Lobby (food)


Lobby or lobbies is a traditional beef and potato stew or broth from Stoke-on-Trent.

The main recipe of lobby consists of diced potatoes, diced beef, carrots, onions, stock such as an Oxo cube, and other various ingredients. Staffordshire has many traditional dishes, including lobby, which was eaten by poorly paid potters who could not afford fresh food every day.

In Leigh, Greater Manchester, the dish earned the nickname "lobby gobblers" for inhabitants of the town, in contrast to the "pie eaters" of neighbouring Wigan, although that particular nickname was originally coined in response to the miner's strike rather than for any particular culinary reasons

Similar dishes to lobby can be found in Liverpool, where it is called scouse.
