Chicken inasal, commonly known as Inasal, is a local variant roast chicken marinated in a mixture of lime, pepper, vinegar and annato then grilled over hot coals while basted with the marinade. It is served with rice, vinegar (sinamak* or white vinegar) and soy sauce. A common dish in the Negros Island Region and Western Visayas, it is a popular specialty in the city of Bacolod, as well as in neighboring cities and towns of Negros Occidental. Many restaurant chains are famous for serving inasal like Bacolod Chicken Inasal and Mang Inasal, which originated in Iloilo City.
