The 1956 Cal Poly Mustangs football team represented California Polytechnic State University during the 1956 College Division football season. Cal Poly competed in the California Collegiate Athletic Association (CCAA).

The team was led by seventh-year head coach LeRoy Hughes and played home games at Mustang Stadium in San Luis Obispo, California. They finished the season with a record of seven wins and three losses (7–3, 0–2 CCAA). The Mustangs scored 270 points while giving up 116 in the 1956 season.

No Cal Poly Mustangs were selected in the 1957 NFL Draft.
