Mast Brothers is an American artisanal chocolate company headquartered in Brooklyn, New York. The company was founded in 2007 by brothers Rick and Michael Mast, who are from Primghar, Iowa and who have been described as having "magnificent Civil War-era beards". Mast Brothers, according to Vanity Fair, are "widely credited for introducing artisanal chocolate to mainstream American culture" and to have been instrumental in popularizing the bean-to-bar movement in America, but has faced criticism for their lack of involvement in the artisanal chocolate business community, as well as allegations they used third-party chocolate in their early products.

The building is located in Williamsburg. Encompassing 3,000 square feet (280 square meters), the Minimalist-style chocolate shop is located inside a building that once served as a spice factory and today houses various small companies. A critic's pick by New York Magazine.

Mast Brothers opened London's first commercial bean-to-bar chocolate factory on Redchurch Street in Shoreditch, an East London neighborhood, welcoming visitors into a multi-use space where they can see the chocolate production process, buy chocolate bars and other treats, and even drink their chocolate.

Mast Brothers opened the first bean-to-bar chocolate factory in Los Angeles, California in May of 2016. The chocolate factory is located in a 6,000 square foot warehouse in the Arts District.

Mast Brothers currently offers 12 varieties of chocolate bars with their 2016 Collection which launched during the London Design Festival. The 2016 Collection consists of six dark chocolate bars (Sea Salt, Mint, Olive Oil, Almond Butter, and their signature Dark) and six milk chocolate bars (Goat Milk, Sheep Milk, Vanilla, Maple, Coffee, and their signature Milk). The bars are available in three sizes. A 70-gram bar of Mast Brothers chocolate typically sells for $9 from the Mast Brothers' Brooklyn flagship location and for $10 at hundreds of secondary retailers. The company has gained attention both for the quality of its packaging design ("not unlike unwrapping a gift", as Vanity Fair described it) as well as for its chocolate, including praise from noted French Laundry chef Thomas Keller.

Mayordomo


Mayordomo or Chocolate Mayordomo is a brand of Mexican chocolate para mesa (English: "table chocolate") produced by the company Chocolate Mayordomo De Oaxaca, S. De R.L. De C.V., and based in Oaxaca, Oaxaca, Mexico. The company manufactures mole sauce in addition to table chocolate.

Unlike many other commercial chocolates, Mayordomo includes only four ingredients, sugar, roasted cacao beans, almonds and cinnamon. These ingredients are ground and blended forming a paste that is pressed into bars and discs.

Due to its undissolved granulated sugar, and its rough and gritty texture, the table chocolate is not meant to be eaten like a chocolate bar, although Mayordomo bars can be eaten out of hand. The bars and discs are primarily used to make hot cocoa in traditional Mexican form. Chocolate Mayordomo is prepared on the stove by dissolving the squares in hot milk or water, then whisking the cocoa with a molinillo or wire whisk. In Mexico, in the traditional Aztec and Mayan form, chile peppers are added to make both sweet and savory dishes.

Milka is a traditional brand of chocolate confection which originated in Switzerland in 1901 and has been manufactured internationally by the US confectionery company Mondelēz International (formerly known as Kraft Foods) since 1990. For more than 100 years Milka has been primarily produced in Lörrach, Germany, producing about 140,000 tonnes of chocolate in 2012. It is sold in bars and a number of novelty shapes for Easter and Christmas. Milka also manufactures chocolate-covered cookies and biscuits.

On November 17, 1825, Swiss chocolatier Philippe Suchard (1797–1884) established a pâtisserie in Neuchâtel where he sold a hand-made dessert, chocolat fin de sa fabrique. The following year Suchard expanded his company and moved production to nearby Serrières, where he produced 25–30 kg of chocolate daily in a rented former water mill. During the 1890s, milk was added to Suchard's chocolate. The product name was Suchard's tribute to soprano Milka Ternina (1863–1941).

In 1970, Suchard merged with Tobler to become Interfood. Interfood merged with the Jacobs coffee company in 1982, becoming Jacobs Suchard. Kraft Foods acquired Jacobs Suchard, including Milka, in 1990. In October 2012, Kraft spun off its snack food division, which was renamed Mondelēz International.

The brand's symbol is a purple cow with a bell around her neck, usually in an Alpine meadow. During the 1990s, Peter Steiner appeared in Milka commercials.

Milka chocolate is produced at a number of locations, including Lörrach, Germany; Bludenz, Austria; Belgrade, Serbia; Svoge, Bulgaria; Bratislava, Slovakia; Brașov, Romania; Costa Rica; Curitiba, Brazil; Jankowice, Poland; Trostianets, Ukraine; Belgium, Argentina, and Chicago.

Max Felchlin


Max Felchlin AG is a producer of chocolate and of baking and confectionery ingredients, headquartered in Schwyz, Switzerland.

Max Felchlin primarily sells wholesale to other confectioners, such as Sprüngli. The most prominent retail product is the Grand Cru line, introduced in 1999, which includes Maracaibo Clasificado 65%, named "world's best chocolate" at the Accademia Maestri Pasticceri Italiani in 2004.

Since 1988, the company has also offered on-site training for pastry chefs and other customers at its Condirama building in Schwyz.

Businessman Max Josef Felchlin opened a honey shop in Schwyz in 1908, and expanded to chocolate by the 1920s. In 1928, Felchlin relocated the business to a rural estate between Schwyz and Seewen, called Liebwylen, and continued to expand the product line to other confections and ingredients. During World War II, Felcher produced Sowiso, a milk powder.

Felchlin transferred control of the company to his son, Max Felchlin Jr., in 1962, and died in 1970, at the age of 87. In 1974, the company became an open corporation and established a new factory in Ibach.

In 1991, Felchlin, Jr. arranged for an association of local Schwyz residents to take majority ownership of the company after his death. The association named Christian Aschwanden as CEO. The company moved to a new factory in Ibach in 2000. By 2006, the company produced 2500 tons per year.

Mindo Chocolate Makers


Mindo Chocolate Makers is a small batch bean-to-bar chocolate maker based in Dexter, Michigan. The company was founded in 2009 by Barbara Wilson and Joseph Meza. Mindo Chocolate Makers is named for the town of Mindo, Ecuador where Joe and Barbara own and operate a small hostel and cafe named El Quetzal de Mindo.

Mindo Chocolate Makers use Ecuadorian Nacional variety cacao beans for the production of their chocolate. The beans are grown by a small cooperative of cacao farmers near Mindo, Ecuador. All of the plants are grown in small lots, hand harvested, and fermented. The beans are dried, roasted, and winnowed in Ecuador then sent to the chocolate making studio in Dexter, Michigan.

The chocolate is hand-crafted in small batches throughout the conching, tempering, and moulding process.

Mindo Chocolate Makers produce minimally processed craft chocolate products such as: bars, cocoa powder, baking chocolate, Mexican-style chocolate, cocoa butter. They also provide unprocessed cocoa beans and cocoa nibs. In late 2012 they introduced Miel de Cacao, a syrup or Saba, made from cocoa fruit.

Mini Eggs


Cadbury Mini Eggs are a milk chocolate product created and produced by Cadbury UK, also produced in Cadbury Adams (in Canada). Introduced by the Cadbury company in 1967. The egg is solid milk chocolate encased in a thin coating of hard candy "shell", molded to resemble a miniature egg.

Mini Eggs were previously produced in the Keynsham plant in Somerset, UK; however as of February 2010, production has moved to Cadbury's new plant in (Bielany Wroclawskie) Poland. These products no longer state a country of origin on the label, instead stating "Made in the EU under licence from Cadbury UK Ltd".

Over the years, Cadbury has introduced a number of variations related to the original Mini Eggs, including:

Cadbury Mini Eggs are made into four colours of shell. The original colours were white, yellow, pink, and light blue. In Canada in 2010, the colours were switched to yellow, pink, green, and turquoise. In the UK they are now white, yellow, pink and purple with speckles.

Moser-Roth


Moser-Roth is a brand of German chocolate produced by Storck for Aldi.

The company was founded in 1841 by pastry chef Wilhelm Roth Jr. in Stuttgart. In 1876 Roth retired from the company and the small factory was taken over by Wilhelm Wagner and Kommerzienrat Sproesser. In 1881 the company moved to larger premises.

In 1896 The company merged with its Stuttgart competitor E. O. Moser & Cie, which had been founded in 1846 by master confectioner Eduard Otto Moser (1818–78).

The brand name Moser-Roth was registered in 1902. Moser-Roth was the largest chocolate factory in Stuttgart in the 20th century, around 1910 employing as many as 550 people. Other chocolate companies in Stuttgart at the time included Eszet, Haller, Waldbaur, Schoko-Buck, Friedel, and Ritter, of which only the last is still in existence. Eszet is now made by Sarotti.

Early in 1942, the company was shut down for political reasons by the German government. In September 1944, the entire factory burned down in an air raid.

Karl Haller of Stuttgart acquired the Moser-Roth brand name in 1947 and in 1948 resumed production in the Obertürkheim section of the city. After his death the Haller company was acquired by Melitta; chocolate production continued until 1967, after which the Moser-Roth brand name passed through various owners, being finally sold to Storck. Since June 2007 Storck has produced chocolate for Aldi at Moser-Roth GmbH, located in the Berlin borough of Reinickendorf. Moser-Roth is Aldi's premium brand of chocolate; it received an award from the German Agricultural Society in 2007.

Neuhaus (chocolatier)


Neuhaus is a notable Belgian chocolatier which manufactures and sells luxury chocolates, biscuits and ice cream. The company was founded in 1857 by Jean Neuhaus, a Swiss immigrant, who opened the first store in the Galeries Royales Saint-Hubert in central Brussels. In 1912, his grandson, Jean Neuhaus II, invented the chocolate bonbon or praline.

Today, Neuhaus has over 1,500 selling points in 50 countries. All Neuhaus products are still made in Vlezenbeek, near Brussels, and are exported worldwide. In 2000, the company received the Royal Warrant of Appointment to the Belgian court.

Having arrived in Brussels from his native Switzerland, Jean Neuhaus opened an apothecary shop in 1857 at the Galeries Royales, near the Grand Place. He began his business by covering the medicines in chocolate to make them more easy to handle. Liquorices, guimauves (similar to marshmallows) and dark chocolate tablets soon joined more traditional preparations on the display counter.

With the assistance of his son Frédéric, he spent an increasing amount of time and effort in preparing and inventing new delicacies to the point where the regular pharmaceutical products gradually ended up making way for them.

In 1912, the year of Frédéric's death, his son Jean II created the first chocolate-filled bonbons or pralines. They were immediately successful. They were followed by another innovation. Louise Agostini, Jean's wife, realised that the pralines were getting crushed inside the paper cornet bags used to wrap them up. Together with her husband, she developed a gift wrap box in 1915 which became known as the ballotin and was later patented.

Jean's son-in-law, Adelson de Gavre, took over the running of the business. In 1958, he created a series of highly acclaimed pralines such as the Caprice and the Tentation which were first displayed at Expo 58. Suzanne Neuhaus, his wife, specialised in decoration and gift wrapping. The company expanded and stores soon appeared across the country and abroad.
